A day with the climbers of Thoothukudi

Before the first bus runs, Murugan has already climbed eleven trees. We followed the sap from crown to kitchen — a photo essay in four ascents.

At 4am the grove is silent except for the creak of a palmyra bending under a climber’s weight. Murugan ties his pot, notches the crown, and is down again before most of the coast has stirred.

By seven the morning’s neera is already on the fire. Sap ferments fast in the heat, so the distance between crown and kitchen is measured in hours, not days — the reason it has to be tapped this early.

We spent a full harvest day with the Thoothukudi co-op, from the first climb to the last jar sealed. What stays with you is how little the process has changed, and how much care each step still takes.
