Wood fire vs. steel boiler: a taste test
We reduced the same sap two ways and tasted them blind. The difference was not subtle.
Steel boilers are faster, cleaner and easier to scale — and they make a perfectly fine, slightly flat sugar. Wood fire is slower, smokier, harder to control, and makes something with corners and depth.
We stayed with wood fire, and pay for it in yield and patience, because the cup of coffee at the end is the whole point. This is the one place we refuse the shortcut.
